Romain Chayot
Co-Founder & Chief Scientific Officer Standing Ovation
Romain Chayot, 43, is the Co-Founder, Managing Director, and Chief Scientific Officer of Standing Ovation, a leading innovative French company in the precision fermentation field.
Romain joined Global Bioenergies in 2009, a French biotechnology company replacing petroleum-based products with natural-origin products. He spent nearly 15 years there and became a member of the scientific steering committee. The company’s development resulted in several patent filings and a stock market listing in 2011.
In 2020, Romain Chayot ventured into entrepreneurship and founded Standing Ovation. Winner of the first FrenchTech 2030 Program, Standing Ovation developed a patented process for producing casein, a flagship protein in the dairy industry, through precision fermentation.
Under his leadership, Standing Ovation makes rapid progress, successfully raising a serie A and forming a strategic partnership with Bel group in 2022.
An agronomist engineer (Institut Agro Montpellier, 2005), Romain also holds a Master’s degree in Cell Biology (Master 2, 2005) from the Pierre and Marie Curie University and a PhD in Molecular Biology and Microbiology from the Pasteur Institute and Pierre and Marie Curie University (2009).
